Look, we have all had a bottle of that vinegary hot sauce at the back of the cupboard. You know the one. It’s half used. It has a few dried up crumbs around the top. Probably hasn’t seen the light of day for a few years. We’re not going to name names here, just look behind the jar of cinnamon. You know it’s there. Well, you can finally throw it out. Because you are not going to go back to it now you have tasted Toluca’s fresh peppers. Oh but do us a favor - when you get rid of the other guys’ vinegary hot sauce - recycle the bottle.

We got into the food business because we love food. Janet was an economics major and worked in aerospace. I was a business major and started a couple technology companies. It seemed to us that all the food products we came across had more and more to do with manufacturing and less and less to do with eating.

The last straw was when we were in a restaurant, Janet asked for some hot sauce and somebody handed her a jar of something that tasted like a mix of stale spices and rocket propellant. We looked at each other and said there has to be a better way. That night Toluca was born.
